In a large-sized, heavy-bottomed soup pan or saucepan, add 7 cups of broth over high heat and bring to a boil.
Add in rice, celery, carrot onion, garlic, thyme, and bay leaves, and again bring to a boil.
Immediately turn down the heat to medium and cook with a cover for around 30 minutes.
Meanwhile, in a Vitamix blender, add the remaining broth, cashews, and beans.
Secure the lid of Vitamix and start to process on low setting.
Immediately turn the speed onto a high setting and process to form a smooth mixture.
In the soup pan, add the cashew paste mixture and stir to blend.
Add in mushrooms and salt and cook, uncovered for around 15 minutes, stirring occasionally.
Discard the bay leaves and enjoy hot.
