Heat oil in a sauté pan, then add the onions and cook until edges are lightly browned (about 5 minutes).
Add your ginger and garlic paste, then cook for another minute. Turn off the heat and set the pan aside to cool a bit.
Mix the refried beans, chickpea flour, oat flour, breadcrumbs, chole masala, red chili powder, and salt in a large mixing bowl.
Add the onion mixture and mix to form a moldable mixture. Add more oat flour or breadcrumbs to absorb moisture if the mixture is too wet.
Divide the mixture into 6 even-sized patties, about ⅓ cup each.
In a pan (non-stick), heat 2 tbsp of oil on medium heat, gently place, and cook burgers undisturbed for about 3-4 minutes, until lightly browned on the bottom. Do this for the other side until a golden brown crust forms on both sides.
