Ingredients
  

  • 1 lb wild Alaskan coho salmon filet
  • 1 tbsp extra virgin olive oil
  • 1 large, fresh lemon
  • Salt and pepper to taste

Instructions
 

  • Prepare your oven at 400 degrees Fahrenheit.
  • Put a cast iron skillet on high heat.
  • Use a paper towel to pat dry the Salmon filet.
  • Brush the filet (skin side down) with olive oil.
  • Squeeze fresh lemon juice over the salmon filet.
  • Season the filet with salt and pepper.
  • Place salmon Filet into the hot skillet.
  • Let it sear for 5 minutes.
  • Use a metal spatula to flip the salmon filet over to the other side (the skin side). If it's sticking, let it sear a bit longer.
