A hearty and satisfying vegetarian and gluten-free breakfast pie filled with all the good stuff, including potatoes mashed and creamed to perfection, kale, and eggs. So, here is how you can make this vegetarian pie!

Ingredients
  

  • 12 oz Soyrizo and remove the casing
  • 4 cups of chopped raw kale
  • 6 whisked eggs
  • 1 minced garlic clove
  • 4 cups of mashed potatoes
  • Seasoning to taste

Instructions
 

  • First, preheat your oven to 400 degrees.
  • Next, you need to heat your oven-safe skillet to about medium heat.
  • Add Soyrizo and let them cook for about five minutes.
  • Move the mixture to a side of your pan.
  • Pour in whisked egg to the cleared side of the pan, then add garlic.
  • Cook until eggs are just cooked through (4-5 minutes).
  • Stir everything together and remove it from the heat.
  • Cover the mixture with mashed potato to coat.
  • Now season it to taste.
  • Let it bake in a preheated oven for 30 minutes.
  • Finally, let it sit and cool for 5 minutes, then serve!

Notes

If you find Soyrizo too spicy for your tastebuds, you can replace it with ground turkey sausage (casing cut open) or tofu to keep it vegetarian! Also, you can add a layer of shredded cheddar cheese over your pie filling before spreading your mashed potato to coat it for extra taste. Remember, you can always use vegan replacement in this recipe.
