Ingredients
  

  • 4 Large Tortillas
  • 8 Eggs
  • 2 tbsp Cooking Oil
  • 1 package of 4 Turkey Kielbasa (about 13 oz.)
  • 1 Bell Pepper (diced)
  • 1 Small Onion (diced)
  • 1 cup Shredded Cheddar Cheese
  • ¼ cup milk
  • Salt and pepper to taste
  • Salsa for serving (optional)
  • Fresh cilantro for garnish (chopped)

Instructions
 

  • Thinly slice the Turkey Kielbasa. Add cooking oil to a large skillet and place over medium heat. Add sliced sausages and cook until lightly browned.
  • Remove from the skillet and set aside.
  • In the same skillet, add the diced bell pepper and onion. Sauté until they are tender and slightly caramelized.
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Move the vegetables to one side of the skillet and pour the beaten egg mixture onto the other side. Turn on the heat and stir eggs gently until they are scrambled and cooked to your desired consistency.
  • Add the cooked kielbasa back into the skillet and stir to combine everything evenly; remove from heat once all ingredients are well-combined.
  • Slightly toast the tortillas in a separate pan.
  • Divide the kielbasa and egg mixture among the tortillas, placing it slightly off-center.
  • Sprinkle shredded cheddar cheese over the kielbasa and egg mixture.
  • Fold the bottom edge of each tortilla up over the filling, then fold in the sides, and roll tightly to form a perfect burrito.
  • Wrap the burritos in aluminum foil and place them in a preheated oven at 350°F (175°C) for a few minutes to melt the cheese and warm the tortillas.
  • Remove the burritos from the oven and unwrap them.
  • Garnish with freshly chopped cilantro for added freshness and flavor.
