I could name a hundred recipes where shredded meat or protein holds the dish together. However, it isn’t easy to shred tough red meats that come from big animals. Poultry is undoubtedly the leading choice, as it is lean and tender.

Chicken takes the win when it comes to convenience because the taste is favored by the majority, and it doesn’t require a prolonged cooking time. I would also add that it complements a wide range of foodstuffs and is budget-friendly. 

I have lost count of how many times shredded chicken has helped me with an impromptu dinner party or in putting together a quick and wholesome meal whenever I’m short on time.

If you are familiar with incorporating tropical flavors in savory dishes, drinks, and desserts, I don’t need to convince you that they are simply heavenly! Tropical fruits like coconut and mango are included in many sweet and savory recipes to attain an adventurous flavor profile.

  • 2 cups of pre-cooked and shredded chicken (from rotisserie or leftovers)
  • 1 ripe mango, peeled, pitted, and diced
  • ½ cup of cashews, toasted and roughly chopped
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp of freshly grated ginger
  • 1 tsp of curry powder
  • ½ tsp of ground turmeric
  • ½ tsp of ground cumin
  • ½ tsp of ground coriander
  • ¼ tsp of cinnamon
  • ¼ tsp of cayenne pepper (adjust to taste)
  • 1 can of coconut milk
  • 1 cup of chicken or vegetable broth
  • 2 tbsp of cooking oil
  • Salt and pepper, as needed
  • Fresh cilantro leaves for garnish
  • Cooked rice or naan bread for serving


  • Heat the cooking oil in a large skillet or pot over medium heat. Add the finely chopped onion and cook until it becomes soft and translucent.
  • Toss the minced garlic and freshly grated ginger into the skillet. Sauté for about a minute until their aromas are released.
  • Mix in the curry powder, ground turmeric, ground cumin, ground coriander, cinnamon, and cayenne pepper. Cook for an additional minute to lightly toast the spices and develop their flavors.
  • Pour the coconut milk and chicken or vegetable broth into the skillet, bringing the mixture to a gentle simmer.
  • Introduce the shredded chicken into the skillet, stirring it to combine with the curry sauce. Allow the mixture to simmer for around 5-7 minutes, letting the flavors meld.
  • Gently fold in the diced mango and chopped cashews. Allow the curry to simmer for another 2-3 minutes until the mango is heated through.
  • Taste the curry and season with salt and pepper according to your taste preference.
  • Serve the Mango Cashew Shredded Chicken Curry over cooked rice or with naan bread. Garnish with fresh cilantro leaves for a pop of color and freshness.
