Ingredients
  

  • 4 eggs
  • 1 medium-sized onion (finely chopped)
  • 4 Roma tomatoes (peeled and finely chopped)
  • 2 tbsp cooking oil
  • 2 garlic cloves (crushed)
  • ½ tsp paprika
  • ½ tsp black pepper (freshly ground)
  • Salt to taste
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ tsp oregano
  • Chopped cilantro or parsley leaves (for garnish)

Instructions
 

  • Heat cooking oil in a large non-stick pan over medium to high flame. Add onion and garlic and cook until soft and translucent.
  • Add salt, black pepper, paprika, and oregano. Stir and let it cook for a minute or until fragrant.
  • Add tomatoes and reduce heat to medium-low. Let it simmer until the tomatoes fall apart, and all the ingredients meld together to form a stew-like consistency. This takes about 15-20 minutes.
  • Carefully crack eggs into the tomato gravy so that they are evenly distributed across the surface. Cover the pan with a lid and let it cook for another 5 minutes or until the egg yolks are set.
  • Your Shakshuka is ready, so remove the pan from the stove and garnish with shredded cheese and cilantro/parsley.
  • Serve with toast, crusty bread, or any flatbread you prefer.
